Ingredients

  • 5 Carrots, peeled and shredded

  • 2 Russet potatoes, peeled and cubed

  • 3 Dill pickles, shredded

  • 4 cups Chicken stock

  • 1 cup Water

  • 1 cup Dill pickle juice

  • 1 cup Sour cream

  • 1/2 cup All-purpose flour

  • 1 teaspoon Kosher salt

  • 4 Tablespoons Butter

Directions

  • Melt butter in stock pot over medium-high heat. Saute the carrots for 3-5 minutes.
  • To the pot, add potatoes, chicken stock, and water. Bring up to a low boil, and boil until potatoes are tender.
  • Separately, thoroughly mix together sour cream, salt, and flour.
  • Gradually add sour cream mixture to pot, stirring constantly.
  • Stir in pickles. Then stir in pickle juice.
  • Bring everything up to a boil once again, and serve.
