Maple Breakfast Sausage & Seasoning Recipe

For 1 LB of Ground Pork (or Venison)
- 1 teaspoon Kosher salt
- 3/4 teaspoon ground black pepper
- 1/8 teaspoon coriander
- 1/8 teaspoon nutmeg
- 1/4 teaspoon red cayenne pepper
- 1 1/2 tablespoon real maple syrup (added separately to ground meat)
For 5 LBs of Ground Meat
- 5 teaspoon Kosher salt
- 3 3/4 teaspoon ground black pepper
- 1/2 heaping teaspoon coriander
- 1/2 heaping teaspoon nutmeg
- 1 1/4 teaspoon red cayenne pepper
- 7 1/2 tablespoon real maple syrup (added separately to ground meat)
For 7.5 LBs of Ground Meat
- 7 1/2 teaspoon Kosher salt
- 5 1/2 teaspoon ground black pepper
- 1 teaspoon coriander
- 1 teaspoon nutmeg
- 2 teaspoon red cayenne pepper
- 11 1/4 tablespoon real maple syrup (added separately to ground meat)
For 10 LBs of Ground Meat
- 10 teaspoon Kosher salt
- 7 1/2 teaspoon ground black pepper
- 1 1/4 teaspoon coriander
- 1 1/4 teaspoon nutmeg
- 2 1/2 teaspoon red cayenne pepper
- 15 tablespoon real maple syrup (added separately to ground meat)
