Homemade Granola Protein Bars (Oats & Honey)

Today we’re making homemade granola protein bars. Made with good, natural ingredients, they’re really quite simple to make (and they taste great too). These granola bars are pretty reminiscent of the oats & honey Nature Valley granola bars, but just a little thicker, a little bit chewy, and with more protein.

Ingredients

  • 2 Cups rolled oats

  • 1 Cup whole almonds, plain

  • 1 teaspoon cinnamon

  • 1/4 teaspoon Kosher salt

  • 2 Tablespoons flax seeds

  • 1/2 Cup sunflower seed kernels

  • 1/2 Cup coconut oil, melted

  • 1/2 Cup honey

  • 1 teaspoon vanilla extract

Directions

  • Roast almonds by placing in skillet over medium-high heat. Stirring constantly, cook for 5-6 minutes.
  • Roast sunflower seed kernels using the same method as the almonds (but cook for only 3-4 minutes).
  • Melt coconut oil over low heat in a small saucepan.
  • Combine almonds, flax, and sunflower seeds in food processor. Process until it’s a coarse meal (about 12 seconds).
  • Add oats, cinnamon, and salt to food processor and process a few more seconds.
  • Add coconut oil, honey, and vanilla extract, and process just long enough to incorporate all ingredients together (about 10 seconds).
  • Spray square baking dish with non-stick spray, and line with parchment paper.
  • Transfer granola mixture into dish and distribute evenly with the back of a spoon. Press the spoon firmly into the mixture to compact it as much as reasonably possible.
  • Bake at 350 degrees F for 25-27 minutes.
  • Allow to cool for a short while, and then transfer granola to wire rack. Allow to cool awhile longer.
  • Cut into bars with a sharp knife. Store bars in an airtight container.
