Ingredients

  • 8 ounces Sharp cheddar cheese (or Swiss cheese)

  • 1 cup All-purpose flour

  • 1 teaspoon Kosher salt

  • 2 Tablespoons Whole milk

  • 1/4 cup Butter (cold)

Directions

  • Shred the cheese, either with a box grater or a food processor grating attachment.
  • With shredded cheese in the food processor, add the flour and 1/2 teaspoon of salt. Use the regular food processor blade to pulse mixture until well blended.
  • Either cut the butter up into tiny cubes and add it into the cheese mixture, or use the grater attachment of the food processor to grate the butter directly into the mixture.
  • Use the regular food processor blade to pulse the mixture until well blended.
  • Add the whole milk, and pulse the food processor until the mixture begins coming together into a dough-like consistency.
  • Turn the dough onto a lightly-floured surface, and form it into a ball with your hands. Place the ball on a piece of parchment paper, and roll it out into a very thin sheet. The thinner you can roll it out, the better. Thinner crackers will be crispier.
  • Using a knife, pizza cutter, or ravioli pastry wheel, trim the edges of the dough to square it up, and then cut rows and columns to create individual crackers. You can make the crackers as big or as small as you want.
  • Use the back of a chopstick, or similar, to poke a single hole in the center of each cracker.
  • Sprinkle 1/2 teaspoon of salt over top of all the crackers. Optionally, you can add more salt than this, or other seasonings to your taste.
  • Put the parchment paper and crackers onto a baking sheet, and bake at 325 degrees Fahrenheit for 30 minutes.
  • Remove from oven and allow crackers to cool.
  • Enjoy!
