Ingredients

  • 9-10 Roma tomatoes

  • 1 Red onion

  • 3 Jalapeno peppers (or serrano peppers for a much spicier pico)

  • 1 Bunch Cilantro

  • 2 Small limes (or 1 large lime)

  • 2 Cloves Garlic (optional)

  • 2 teaspoons Kosher salt

  • 1/2 teaspoon Black pepper

Directions

  • Cut tomatoes into quarters. Slice out the seeds and juicy membrane and discard. Chop the remaining fleshy tomato parts into small pieces.
  • Peel and chop the onion.
  • Seed and finely chop the jalapeno peppers (or serrano).
  • Peel and mince the garlic, if using.
  • Chop the majority of the stems off of the cilantro bunch, and discard stems. Chop the cilantro leaves into small pieces.
  • Combine all chopped ingredients into large bowl.
  • Squeeze lime juice over top.
  • Sprinkle salt and pepper over top.
  • Stir everything thoroughly.
  • Cover and refrigerate for 30-60 minutes before eating.
