It’s canning day, and today we’re making a batch of BBQ sauce. This thick, bold sauce goes great on chicken, ribs, or anything else. And no, ketchup is not one of the ingredients!

Ingredients

  • 14 Cups tomatoes, diced

  • 2 Cups white onion, chopped

  • 1 1/4 Cups white vinegar

  • 1/3 Cup molasses

  • 1/3 Cup honey

  • 1/3 Cup brown sugar

  • 1 Tablespoon paprika

  • 1 Tablespoon Kosher salt

  • 1 Tablespoon onion powder

  • 1 Tablespoon garlic powder

  • 1 Tablespoon mustard powder

  • 1 teaspoon black pepper

  • 1/4 teaspoon cayenne pepper

  • 1 Tablespoon mesquite liquid smoke

  • 1/4 Cup steak sauce (or substitute with Worcestershire)

Directions

  • Simmer tomatoes and onions in large pot for 20-25 minutes, or until onions are very tender. Then puree with immersion blender.
  • Simmer on low for 45 minutes, and then blend again with immersion blender.
  • Stir in all remaining ingredients. Simmer on low until the desired consistency is reached, 30-45 minutes.
  • Blend one more time with immersion blender.
  • Ladle sauce into heated, sanitized pint jars, leaving 1/2″ of headspace.
  • De-bubble and wipe rims. Place on lids and rings.
  • Process in hot water bath canner for 20 minutes (adjusted for high altitude, if needed).
