Favorite Homemade Pizza Dough Recipe

This is my current go-to pizza dough recipe for basically all of my pizza needs. It’s soft, supple, and easy to work with – and cooks up with a lightly crispy exterior and chewy center.

Ingredients

  • 500 grams OO (Double O) Pizza Flour

  • 325 grams Water

  • 5 grams Yeast

  • 10 grams Kosher salt

Directions

  • Heat the water up to between 100 and 110 degrees Fahrenheit. Combine water with yeast and let sit for 5 minutes to bloom.
  • Into the bloomed yeast mixture, add the flour and salt. Mix in a stand mixer for 10 minutes on medium speed.
  • Form dough into a ball and place in a lightly-oiled bowl. Cover with plastic wrap and let rise for 1 1/2 hours.
  • Turn dough onto floured surface, and divide into 2-4 portions. This batch will make 2 large pizzas or 4 pretty small pizzas.
  • Shape each portion into a tight ball, tucking and rolling so all seams are on the bottom. Place dough balls on an oiled baking sheet and cover with greased plastic wrap. Press plastic wrap around each dough ball to ensure it is fully covered.
  • Place dough balls into refrigerator and rest for 30 minutes.
  • On floured surface, stretch dough to desired shape and size. Assemble pizza and bake according to your pizza recipe.
