Easy Delicious Chimichurri Recipe

Today we’re making an absolute favorite of Argentinian cuisine. Made with herbs, oil, and vinegar, Chimichurri is a flavor-packed sauce that I can’t get enough of. Use it as a marinade, or drizzle over top grilled meat. This recipe is super easy to make, and your taste buds will be happy you did!

Ingredients

  • 1 Cup Olive oil

  • 4 Tablespoons Red Wine Vinegar

  • 1 Cup Fresh parsley, chopped (about 1.5 bunches of fresh parsley, with stems removed)

  • 8 Cloves Garlic

  • 1 1/2 teaspoons Crushed red pepper (or 1 large fresh red chili pepper, seeded)

  • 1 1/2 teaspoons Dry oregano

  • 1 1/2 teaspoons Kosher salt

  • 1 teaspoon Black pepper

Directions

  • Combine parsley, garlic, red wine vinegar, red pepper flakes (or chili pepper), oregano, salt, and pepper into food processor. Blend until garlic and parsley are finely chopped and everything is thoroughly blended.
  • Transfer mixture into bowl. Pour olive oil over top, and stir very well with spoon.
  • Cover and set aside for at least 2 hours before using.
  • Marinate fresh meat in some of the finished chimichurri, making sure to set some aside in a separate container for later. While grilling, baste meat halfway through. After plating, drizzle some more over top from the chimichurri you set aside earlier (as to not cross-contaminate with any that was used on the raw meat).
