Restaurant-Style Hummus Recipe

As a hummus fan and connoisseur, I never cease to be disappointed by store-bought, pre-packaged hummus. The texture is grainy and the taste is a little weird. But fresh made hummus served at Middle Eastern and Mediterranean is one of the tastiest things on Earth. So in this video, I’m going to show you how to make authentic “restaurant style” chickpea hummus at home.

Ingredients

  • 1 LB dried chickpeas (or 4 15-oz cans of chickpeas)

  • 3 Cloves garlic

  • 1 Cup tahini

  • 1/3 Cup lemon juice

  • 2 teaspoons salt (Kosher or Sea salt)

  • 1 teaspoon baking soda

  • 3-4 ice cubes

  • Olive oil

  • Paprika or sumac (optional)

Directions

  • Put dry chickpeas in large bowl and completely cover with water. Allow to soak for 12 hours (if using canned chickpeas, skip this step).
  • Drain and rinse the chickpeas. Put into medium-sized pot and add fresh water, covering the chickpeas by at least 2 inches of water. Add baking soda and peeled garlic cloves.
  • On high heat, bring water to a boil. Then stir down the foam, and reduce heat to a simmer. Let everything simmer for 90 minutes, stirring occasionally.
  • Drain excess water, and transfer everything to a bowl. Allow to cool until completely down to room temperature.
  • Transfer mushy chickpeas to food processor. Blend for 4 minutes. Pause the blending to crape down the sides with a spatula every couple minutes.
  • Add ice cubes to food processor and mix for 2 more minutes.
  • Add tahini and process for 1 more minute.
  • Add lemon juice and salt, and process for 3 more minutes.
  • Hummus is ready to eat. Serve on a plate and drizzle with olive oil. Sprinkle with paprika or sumac.
