Ingredients

  • 10 ounces Chow mein stir fry noodles

  • 2 ribs Celery, sliced longways and chopped thin

  • 1/2 white Onion, halved and sliced with the grain into thin strips

  • 3 cloves Garlic, minced

  • 1 Tablespoon Grated fresh ginger

  • 2 cups Green cabbage, shredded very thin

  • 1 teaspoon Red pepper flakes

  • 2 Tablespoons Chinese cooking wine (optional)

  • Chow Mein Sauce
  • 2 Tablespoons Soy sauce

  • 2 Tablespoons Soy paste (or just more soy sauce if you don’t have it)

  • 2 Tablespoons Oyster sauce

  • 2 Tablespoons Water

  • 2 teaspoons Rice wine vinegar

  • 2 teaspoon White sugar

  • 1 teaspoon Ground white pepper

Directions

  • Put sauce together by mixing all sauce ingredients in a bowl and whisking together thoroughly.
  • If your chow mein noodles require boiling, get your hot water boiling in a pot on the stove. You should time the noodle boiling step for just when you need them (Step 6 of this recipe), per the directions on your noodles.
  • Heat vegetable oil in wok or very large skillet (just enough oil to cover the bottom of the pan). Get the oil quite hot.
  • Add celery and onion, and stir-fry for a minute. Then add in the cabbage, and stir fry for a couple more minutes.
  • Add the garlic, ginger, and red pepper flakes. Stir fry everything for another minute.
  • Add the cooked and drained chow mein noodles. Stir fry everything for another minute.
  • Pour in the sauce, and stir fry for another minute.
  • Optionally, stir in a splash of Chinese cooking wine (like Shoaxing), and stir fry for another minute.
  • Serve noodles in a bowl. Optionally garnish with sliced green onion, sesame seeds, or a very light drizzle of sesame oil.
